The almond seed or Badam is obtained from the the almond tree (Prunus dulcis), which is a deciduous tree that grows up to 6 - 10 metre in height and is native to the Middle East and South Asia.
The fruit that contains the almond is a drupe fruit with a single seed. The almond fruit is 3.5 6 cm in length. The fruit exocarp, which is thick and grey-green in colour is called the hull. The endocarp is a woody shell that contains the edible seed called the Almond.
The global demand for Almonds has seen a meteoric rise over the last decade due to its proven cardiovascular benefits. A recent research finding from Cambridge University says that every ounce (approx 28 grams) of almonds eaten daily is associated with a 3.5 percent decreased risk of heart disease ten years later. Other published studies have found that Almonds help prevent diabetes, potentially relieve arthritic symptoms, inhibit cancer-cell growth and decrease Alzheimer's risk. Studies attribute Almond's high nutritious value to the presence of monounsaturated fats, vitamin E, fiber and antioxidant phytochemicals.
Uses: Almonds is used in a wide variety of ways -- raw, roasted, sliced, and as flour. These products can be used in both sweets and savoury dishes such as muesli, ice creams, marzipan, pastries, cookies, and cakes, etc. Almonds, processed into milk form make for a healthy and tasty milk substitute for vegans and lactose intolerant people.
Italians use Almonds to make small soft cakes and in popular dishes such as torrone and ricciarelli. In Greece, blanched almonds are used in a variety of popular wedding desserts called amygdalota. In South Asia, Almonds are consumed in the form of snacks as well as used as a popular ingredient for sweet dishes and Mughlai curries. Almond is also a rich source of oil, which is used as an emollient, and also as a wood conditioner.
