Pepper (Piper nigrum) is produced from the fruit of the pepper plant that belongs to the Piperaceae family. The dried fruit of the plant is called peppercorn which is approximately 5 millimeters in diameter. Depending on the time of the harvest and the type of processing, peppercorns can be black, white or green.

Black Pepper
It is one of most widely used spices in the world. Black pepper is derived from the unripe fruits or drupes of the pepper plant. These drupes are cooked and dried to turn the seed coating into a thin, wrinkled black layer. The dried form thus obtained is called black pepper which is used in whole or powdered forms.

White Pepper
White pepper is obtained from ripe fruit seeds of the pepper plant by removing the dark-coloured skin of the fruit. This is done through a process called Retting whereripe red pepper fruits are soaked in water for a few days to soften the seed coating. The soft, decomposed coating is removed to extract and dry the seed to obtain White Pepper.

Green Pepper
Green pepper is obtained from the pepper plant's unripe drupes through processes such as freeze-drying that retain the green colour of the drupes.

Major Producers: Vietnam is the largest producer of black pepper in world followed by India. The other major producing and consuming countries are Sri Lanka, Brazil, Indonesia and Malaysia.

Uses: In addition to being used as a hot and pungent flavoring for food, black pepper is also used in traditional medicine, particularly for digestive ailments. It is therefore recognized as the "Black Gold of Spices."Ground white pepper is used in Chinese and Thai cuisines, cream sauces, and mashed potatoes. Green pepper is mostly used in Asian cuisines for their distinctly spicy yet fresh flavour and aroma.
