Pistachio is obtained from the pistachio tree (pistacia vera), a broad, deciduous tree native to Western Asia and the Middle East. The Pistachio tree which grows to a height of around 25 feet to 30 feet, begins bearing fruit in 15 or 20 years from the time it's sown. Each tree bears around 50 kg of seeds every two years. A mature Pistachio fruit splits open longitudinally along their sutures with an audible pop to reveal the edible seed. The Pistachio fruit has a hard, ivory shell and a soft, edible kernel or seed which is about one inch in length and half-an-inch in diameter. The colour of the seed varies from yellow to different shades of green.
Uses: Pistachio, eaten fresh or roasted and salted, is a popular and premium snack consumed globally. It is also used in ice creams, confectionary, cold cuts, pudding, and whipped cream. Pistachios are cholesterol-free and are a rich source of many essential minerals and vitamins, monosaturated and polyunsaturated fatty acids, protein, fibre, and phytochemicals all of which make them a healthy choice of snack.
