Rice is the seed of the rice plant (Oryza sativa), an annual grass of the Gramineae family. Rice is the most consumed cereal grain in the world – it is the staple food for over half of the world's population, including virtually all of East and Southeast Asia.
In terms of production, it is the third-largest agricultural commodity in the world, after sugarcane and maize. Rice is world's predominant source of dietary energy supply, followed by wheat and corn.
The rice plant grows to about 4 feet tall. Its leaves are long and slender, about 30 to 35-inch long, and its raceme, about 12 to 20-inch long, contains spikelets of flowers that bear the edible grain. Rice milled to remove only the husk is called brown rice, whereas rice milled to remove both husk and bran is called white rice.

Uses: Rice is available in three varieties: long, medium, and short grain. The long-grain rice, which is four to five times as long as it is wide, is regarded as the most premium variety of the three. It contains least starch among all the varieties, so the cooked rice grains are light, fluffy, and separate. Its reputation as a premium category stems from long-grained varieties such as Jasmine or Basmati which are known for their distinctive taste and aroma. Long-grained rice is used in pilafs or rice dishes that are served with sauce or curry. Medium-grain rice is two to three times longer than its width. It is softer and stickier than long grain.
Short-grain rice has higher starch content, causing the grains to stick together when cooked. It is used in dishes such as Sushi, Risotto, and Paella. Medium-grain rice has a size and character in between the other two. Brown rice is more chewy and nutritious than white rice but takes sightly longer to cook.
