Spices - Cardamom

Cardamoms are small seed pods borne by several plants of the genera Elettaria and Amomum in the ginger family Zingiberaceae. Cardamoms are spindle-shaped, have a fibrous outer shell, and contain small black seeds. Cardamom's unique flavour and strong fragrance make it a popular choice for cuisines around the world.

Cardamom is of two types: Elettaria or green cardamom. Green cardamom is a cool spice and has a minty aroma. The second type is Amomum or black cardamom which has a smokey aroma, is a hot spice and has antiseptic qualities. Green cardamom is often referred to as the Queen of Spices and is rated as the world's third most-expensive spice after Saffron and Vanilla.

Uses: It is commonly used in rich Indian cuisines. In Scandinavian countries such as Sweden and Finland, cardamom is used in desserts, cake and bread & in South Asia. It is widely used to enrich the sweet and savoury dishes. It is also used as breath fresheners.
