Sugar, a crystalline tabletop and industrial sweetener used in foods and beverages, is obtained from sugarcane (Saccharum officinarum) and sugar beets (Beta vulgaris). Sugarcane is a perennial grass in the Poaceae family, whereas sugar beet is a biennial plant in the Amaranthaceae family. Sugarcane contains 7 to 18 percent sugar and sugar beet contains 8 to 22 percent sugar as per weight. About 75 percent of the global production of sugar comes from sugarcane and the rest from sugar beets.
The processing of Sugarcane is mainly done by extracting cane juice from sugar cane by processes like milling or diffusion. Subsequently, the cane juice is clarified by evaporation and dried to obtain sugar crystals.
Sugar is obtained from Sugar beets by diffusion in which milk of lime is added to the raw beet juice, and the resultant syrup is purified, boiled, and evaporated to seed sugar crystals.
Uses: Crystallised sugars are used to sweeten food and drinks. Sugar also functions as a preservative that prevents perishable food from spoiling in popular food items such as jams, marmalades, and candied fruits, etc. Powdered sugar is mainly used as icing in baking and confectionery. Brown sugar, which is granulated sugar mixed with molasses, is used in baked goods, confectionery, and toffees. Sugars syrup is a key ingredient used in the making of beverages, ice-creams, jams, and hard candy.
