Spices - Cumin

Cumin or Jeera(in Sanskrit) is the seed of the CuminumCyminum plant, a member of the parsley family. The cumin plant grows to 30–50 cm in height. On maturity, the slender, plantdark green or grey stem of the plant forms a canopy of branches and sub-branches that bear ovoid fruits, each containing a single cumin seed. A cumin seed is oblong in shape, has eight longitudinal ridges and is yellow-brown in colour.Cumin's high essential oil content lends it a distinct nutty-peppery flavour and strong, earthy aroma.

Major Producers: India produces 70 percent of the world's production. Other producers are Syria, Turkey and a few countries in the Middle East.

Uses: It is used as whole seeds or ground for its distinct taste and aroma in the preparation of food dishes including pickles, biscuits and sauces. It is also used for traditional medicinal purposes for its digestive properties.

In traditional Ayurvedic medicine, cumin is prescribed extensively for its digestive properties and for treatment of heart disease, swellings, tastelessness, vomiting and chronic fever.Recent research shows that it can also be used as an antioxidant and an anti-diabetic supplement.
